Sometimes it is necessary to modify your catalog quite quickly and delete variants.
Here are two easy ways to do this:
Delete variants from the Shopify back office
The first step is to go to your Shopify admin and click on Products. Then, click on the name of the product for which you want to remove variants.
On the product page, click on the Variants section.
Next to each variation you want to remove, click the ... button and then select Remove.

Please note! If you bulk delete variants in Shopify, this will delete all inventory levels, product images, and pricing information from the variant. This cannot be undone.
A confirmation message appears, asking if you want to delete the variant. Click Delete Variant.
After you have deleted all the variations you want, click Save.
You have now successfully deleted your product variants!
Delete variants via Shopify file import
Alternatively, you can modify all of your products using Shopify's file import/export.
The one included by default is more than enough in case you don't have Metafields. If you need metafields for products then you may need to turn to Shopify applications such as Matrixify for example.
Export catalog from Shopify BO
The first step to mass-editing variants is to export your Shopify catalog to CSV. To do this, go to "Products" and click Export at the top right.

Edit catalog in Excel
Then, once you have your CSV file, it will be sent to you by email, you can modify it at leisure with your favorite tool: Excel, Google Sheet, Notepad++ or other.

Import catalog from Shopify BO
All that's left is to import the catalog again via Shopify's import function and you will have your catalog modified by you.
Caution! If you check the "Replace all current products..." box, you will overwrite your existing data. Handle with care, as it is impossible to go back.
